Fausto Albanesi lovingly tends his rugged hilltop vineyard overlooking the Adriatic. You may know Pecorino as a hard cheese like Parmesan made from sheep’s milk. The grape Pecorino is so named because, legend has it, the sheep in the area loved to munch on this grape. Its profile is dry, mouthwatering, with flavors of lemon peel and bitter almond. Very crisp and floral, it is aged in stainless steel on lees for six months. If you love Sauvignon Blance, but want to try something different, give this hard-to-find grape a chance. You’ll be glad you did.
