‘Big Salt’ is a dry, white blend that aims to capture a day at the beach in a bottle of wine. Established in 2011 by Ksenija and John House, Ovum was founded in hopes of producing Oregon wines that are honest reflections of time and place. Ovum uses low intervention production methods such as using native yeasts and leaving their wine unfined and unfiltered. The resulting wine is something that is reminiscent of old school wine for the modern drinker. ‘Big Salt’ features hints of florals and sea spray on the nose. On the palate there is salty white tea aromas, interlaced with pithy lemon, and racy acidity combined with beeswax-y textures before finishing dry. Enjoy on the beach or with your next meal!
