About an hour north of Rome, you will find a quiet convent inhabited by 80 nuns that have been growing grapes since 1963. In the early 2000’s, they met Giampiero Bea of nearby Umbria who was struck by the rawness of the wine they’d been producing, and he began working with Adriana and Fabiola of the Sisters Cistercensi to guide them towards a more elegant style of wine. They produce wines with no added yeast and no temperature stabilization, so it makes for an incredibly natural style of wine – the way God intended so to speak. The vines grow in volcanic soil, and that terroir comes through in the wines in addition to flavors of dried apricot, dried herbs, and a salty, nutty finish.
