Chardonnay is the most commonly produced and the only other white varietal that is permitted under the Nuits-Saint-George designation. The Chevillon domaine is currently being operated by fifth-generation brothers Denis & Bertrand and is a reference point producer within the village of Nuits-Saint-George. The domain has a remarkable average vine age, which they painstakingly maintain manually, and they also have an envious group of holdings across the finest premier crus in Nuits-Saint-George. Perhaps even more impressively, the domaine has a reputation for consistent excellence in a region where wildly variable weather and a fickle grape all too often conspire to create wildly different experiences year after year. And while there are technically no Grand Crus within the region, the Cailles, Vaucrains, and Les Saint-Georges vineyards are widely regarded as equal to or better than many famous vineyards with a Grand Cru designation.
