In the village of Chitry-le-Fort, just beyond Chablis, Olivier Morin continues a generations-long family legacy in grape growing. Farming 35 acres with his wife Nelly, they have been fully organic since 2020. His hillside cellar operates by gravity flow, with native yeast fermentations and minimal filtration. While many Chitry farmers once chose to cultivate cherries over grapes, the Morins stayed dedicated to viticulture. The ‘Coquette’ Pinot Noir comes from marl and clay soils over Portlandian limestone, similar to Chablis, yielding a fresh, quaffable style with fine-grained tannins and notes of dried roses, red cherry, and cranberry, plus peppercorn and toasted baking spices on the finish.
