Emmanuel Rybinski is one of Cahors’ brightest young stars. Located in the Southwest of France, Rybinski’s estate sits atop an iron-rich plateau, benefiting from high elevation that allows for organic farming with ease. He even plows the vineyards by horse. The grapes for his ‘K-Or’ Malbec are harvested early and undergo a cold maceration for five days without added yeasts or enzymes. Aged for 18 months in unlined concrete vessels, the wine showcases earthy aromas of garrigue and decaying violets. On the palate, it is fruit-driven with ripe, juicy blackberry, moderate tannins, and a touch of peppery spice on the finish.
