For generations the Baruffaldis have been stewards of the Castello di Stefanago estate. At the center of the property lies a fourteenth century castle which houses the winery and cellar. Antonio and Giacomo have long followed organic farming practices striving to grow healthy, natural grapes that reflect the terroir on which they’re grown. ‘Macerato,’ made from the grey skinned Pinot Grigio, undergoes five days of maceration with the skins and stems. This process is what provides ‘Macerato’ with its’ peachy pink color, textured mouthfeel, and structured palate. This is not your typical Pinot Grigio – herbs, savory spice, and saline minerality are balanced by fresh citrus fruit and pear.
