Ameztoi is a pioneer of Gerariako Txakolina, and their innovation is responsible for putting this region on the world stage. The vineyards overlook the Atlantic Ocean and have been in the family for five generations. Their ‘Unicus’ cuvée, made using the ‘Metodo Tradicional’ (or ‘Champagne Method’), is a rare treat. They age this wine in foudres for a year before bottling, then on the lees for 6 years, making the 2016 vintage the current release. This process results in a complexity rarely found at this price point. The wine is salty, briny, and shows refreshing acidity despite its age, with a long finish of brioche and pastries.
