Tim Wildman is a British born Master of Wine who runs his own independent portfolio wine business in addition to taking wine trade professionals on educational tours of Australia. In 2014 he started Wildman Wine, a project that focuses on Mediterranean varietals made in the pétillant naturel style. Tim allows his wines to bottle age through the winter season in order to achieve better texture and depth of flavor. ‘Astro Bunny,’ one of Tim’s flagship wines, is a blend of white and red grapes that see about 24 hours of skin-contact resulting in a peachy-orange color with floral and nectarine aromas. Gentle bubbles lead to flavors of watermelon and grapefruit with crisp, refreshing acidity.
