Gönc (rhymes with fonts) winery takes its name from both the family that owns and operates the vineyards as well as the name for the classic 136-liter barrel that has traditionally been used in Slovenian winemaking. Peter, who currently helms the operation, is the fourth generation of Gönc to oversee the organic farming and natural winemaking practiced at his family estate. His 'Canvas' sparkling rosé is an elegant, sophisticated style of pet-nat that may even satisfy Champagne drinkers. Pure red berries and sultry cherry blossom aromas introduce a dry, textured palate of fine, frothy bubbles. There's some spice and zesty acidity giving this wine a serious edge that allows it to pair with a variety of foods.
