Founded in 1984, Salcheto began as a multi-crop farm before becoming a 150-acre vineyard focused on organically farmed grapes. Known for its commitment to sustainability, the winery operates one of the most ecologically advanced wine cellars. Due to extreme weather in 2023, Salcheto produced only two wines, including the ‘Biskero’ Chianti. Made from hand-harvested grapes, it is fermented with native yeasts and no added sulfites. After fermentation, 30% is aged for four months in large American oak barrels, allowing the wine to express its pure red cherry, plum, and delicate spice notes balanced by smooth tannins and fresh acidity.
