Although you have probably never heard of Elbling, it is one of the most ancient German varietals, dating back to the Medieval era and, perhaps, even Roman times. Winemaker Matthias Hild is deeply passionate about reviving old parcels of this once ubiquitous grape. He farms 12 acres by hand with the intention of producing quality-minded and honest wine. Genetically related to Riesling, Elbling is loaded with vigor and energy in addition to its strident and chalky acidity. Loaded with zippy lemon pith, stone fruit, and herbs, this wine is playful on the palate while still providing enough weight to stand up to a serious meal.
