Gian Paolo Isabella, a Muay Thai champion turned winemaker, and his brother-in-law Marcello founded Podere il Saliceto in 2005. This nearly 10 acre estate is nestled in the tiny village of Campogalliano just outside of Modena. They work with classic local grape varieties to produce their Lambrusco as well as more common international grapes like Sauvignon Blanc which makes up a portion of this ancestral method sparkler. Direct press Trebbiano and Sauvignon Blanc are fermented in stainless steel and then bottled with leftover must from the original harvest to begin secondary fermentation. This process creates soft, tiny bubbles and a frothy texture. The palate is dry with vibrant acidity and notes of grapefruit, tomato leaf, and a mineral-driven finish.
