Jean Pascal Aubron’s family estate in the western Nantes region of the Loire is known for producing world-class Melon de Bourgogne since 1843. Their vineyards near the Atlantic coast sits on volcanic rock that truly showcases Melon’s racy and fresh nature. He makes the ‘Les Bulles’ in the ancient petillant naturel style, starting fermentation naturally in tank before finishing it in the bottle. The result is an electric palate balanced by a yeasty texture. Shortbread and lemon drops and zesty acidity is complimented by a briny finish.
