For years Eric Dhondt and Edith Grellet would sell off their grapes to negociants. However, in 1986 they decided to switch their focus to not only farming but producing Champagne from their estate fruit across the Côtes des Blancs. Today their son, Adrien, has taken over the winemaking and is quickly bringing his family’s wines to another level by slowly increasing the range of Champagnes produced by isolating their holding across the villages of Cramant and Cuis. ‘Dans Un Premier Temps...’ is made in their house style and intended to be a representation of all three of the villages he works with. Candied lemon peel, almond, and floral notes meld together giving this wine an uncommon depth and nuance.
