The Cincinnato winery is named after the ancient Roman senator and farmer, Cincinnatus. Founded in 1947, this is a small co-operative of 126 growers and just over 600 acres of vines. Located just south of Rome, the estate only vinifies native grape varieties to produce flavorful, distinctive, hand-crafted wines at approachable prices. ‘Pollùce’ is made of Nero Buono and is matured for 12 months in stainless steel keeping the fruit front and center on the palate. Aromas of mixed berries and cinnamon lead to a mid-weight palate with soft tannins and balanced acidity to accompany the flavors of red raspberry, black cherry, blueberry skins, and a hint of spice on the finish.

Pairings: Beef stroganoff
