In Mallorca, not many people are making wines with indigenous varietals - instead, opting for internationally sourced grapes that create intensely high ABV, out-of-whack wines. Cati Ribot is leading the charge to change this winemaking culture by creating small batch wines made with indigenous varietals that produce fresher, lower alcohol wines. The Mallorcan terroir shoes off in this wine: clay and saline. Albeit earthy, ‘Son Llebre’ is fresh and light with perfumed roses and savory herbs on the nose, crunchy red fruit on the palate, and well-balanced acidity.
