David Sautereau’s estate in Sancerre is about 90 minutes south of Paris by train, where he and his wife make for incredibly welcoming hosts. The views from the vineyard are picturesque, the local Chavignol cheese delicious, and the wine of course outstanding. David is a 10th generation vigneron, learning the family craft as a young man at the heels of his parents and taking over in 1997 after stints studying in Champagne and Burgundy. This is classic Sancerre, replete with apple and pear, grass and herbs, limestone, and vibrant acidity from start to finish.
