Winemaker Thibault Brocard is the fifth generation in his family to farm the vineyards and make wine at the estate. This cuveé is a blend of many vintages and utilizes soleras that his father Pierre started in 1991. Grapes are hand harvested and gently pressed before being fermented in both stainless steel and French Oak. Malolactic occurs naturally and the wine is unfiltered. After secondary fermentation in bottle, ‘Tradition’ spends about three years on the lees before release. Being mostly Pinot Noir, the palate sings with notes of red fruit but is still accompanied by the notes of citrus, brioche, and textured bubbles we love in Champagne.
