Marc Ollivier of Domaine de la Pépiere is one of the top producers in the unassuming region of Muscadet Sèvre et Maine in France’s Loire Valley. He utilizes native yeasts to carry out a natural fermentation, old vines, at least 60 years of age, and extended lees aging to create wines that show intense minerality balanced with richness and bright acidity in even his basic Muscadet. The Clisson vineyard is situated on high density granite soils of some of the best hillisides in Sèvre et Maine, bringing forth a beautiful sense of terroir laced with minerality throughout. Bright lemon and golden pear shine on the medium-bodied palate.

Pairings: Scallops with spring onion, tarragon, and goat cheese
