Pronounced ‘beer’, the focus here is on quinine, which is expertly blended with bitter orange and coffee to produce a rich, port-like aperitif with mild sweetness. If the spelling doesn’t look at all familiar, there’s a good reason – it’s from the heart of French Catalan

1 oz Byrrh
1/4 oz Luxardo liqueur
Crude ‘Sycophant’ 
Stirred, strained, served up in a martini glass with a lemon twist
