The name Clavelin is well-known across Jura, but not the way you might expect. It is the traditional name for the squat bottles that are used for the distinct style of highly oxidized white wine known as Vin Jaune, for which Jura is famed. The fortuitously named Hubert Clavelin and his sons do make Vin Jaune, but their sparkling wine is a revelation made entirely of Chardonnay from limestone rich soils and aged for two years on the lees. It bears the designation as their ‘tête de cuvée’, a term Champagne houses use to denote their very best wine. Crisp lemon notes are back by ripe apple fruit and rich toasty notes from extended aging.
