'Just a Pinch'

I do like to be by the seaside, but when I can’t, I’m good with the sound of waves out of my headphones, and a glass of high salinity wine. I’m not talking about *actually* seasoning your wine, though. In wines, high acid and high minerality often combine to create an impression of sea air – sometimes with a slight spritziness that vividly evokes sea spray. Albariño, Assyrtiko and Vermentino are some grapes to seek out. They’re also fantastic food wines, as their crisp, lean profiles will pair well with rich and light dishes alike. Look, too, to rosé, especially from coastal regions, where minerality sometimes expresses as salted melon or preserved lemon – whether that’s in pale, delicate styles or complex, savory bottles.
