So much of the world of wine is an exercise in patience, and while we mostly leave aging wines for the classically long-lived and expensive wines, there is amazing reward and joy in aging wines that are currently “ready to drink”. The next part of this is the most difficult. When purchasing a wine that you know you love, get crazy and buy a second one. But wait, there’s more! Don’t drink the second one! Put it in a cool dark spot and try to forget about it for a little bit. Before you know it, if you are virtuous, you will have built a small collection of things you know you like. Montenidoli will be good for 2 years, Cibonne, and Saint-Cyr 5+, and the Grüner will outlive me.
