Husband and wife winemaking team, Anna and Jordi Valles, produce Conquilla from their estate-grown, sustainably farmed vineyards. The name ‘Conquilla,’ meaning ‘shell’ in Catalan, nods to the limestone-rich soils of the Penedès valley. Vinification includes an 8-hour skin maceration and a slow secondary fermentation at low temperatures, followed by one year of aging on the lees in bottle before disgorgement. The result is a crisp, refreshing sparkler with frothy bubbles and notes of juicy strawberry, tangy raspberry, and cherry blossom.
