Château Yvonne, a historic estate dating back to the 16th century, was revived in 1997 when Yvonne and Jean-François Lamunière restored its abandoned vineyard. In 2007, Mathieu Vallée took over, preserving the name in tribute to the previous owners’ work. Today, the domaine is one of Saumur’s top producers.Their flagship wine is sourced from three old vine parcels in Parnay. It is fermented with native yeast in large oak foudres and aged for 12 months in barrels, 20% of which are new oak. The wine offers a bouquet of blackberry, dried herbs, and violets, with flavors of strawberry, currant, green pepper, and a touch of minerality. It is a balanced, elegant Saumur-Champigny with moderate tannins.
