In 1991 Zlatan Plenković founded his winery on the small island of Hvar, only the second private winery since the fall of Communist Yugoslavia. His vision took him from poor fisherman to owning and operating one of the largest most influential wineries in Croatia. Although Zlatan has now passed away, his family still runs the winery in addition to Bilo Idro, their marina-side restaurant and wine bar for which this wine was named. Made of the indigenous varietal, Plavac Mali, the ‘Bilo Idro’ red is a lighter, fresher expression of this classic Croation grape. Warming spices on the nose are accompanied by aromas of strawberry, black raspberry and red plum. The palate is full of dark fruit and leathery-earth notes, tart acidity, soft tannins, and a delightfully peppery finish.

Pairnig: Sausage in a Pita with Ajvar - Pepper, Eggplant, & Onion Relish
