Viña Sastre, a revered family-run winery in Ribera del Duero, crafts long-lived wines from organically and biodynamically farmed vineyards near the Duero River. One of their most unique offerings is ‘Flavus,’ made from 100-year-old Cayetana Blanca vines co-planted in the historic Pago de Santa Cruz vineyard. First produced in 2007 as a simple white, this wine has surprised even its makers with its ability to age gracefully. After one year in stainless steel followed by two years of bottle aging, ‘Flavus’ offers aromas of dried citrus blossoms, bruised apple, lemon zest, and almonds, finishing with saline minerality and a long, creamy finish.
