After a successful career as a computer engineer, Laurent Herlin decided to switch gears and follow his dream of becoming a winemaker. He studied in Beaune and then got several harvests under his belt by interning with small producers. In 2009, he acquired his own farm in Bourgueil. Today, Laurent farms nearly 15 acres of Cabernet Franc with organic and biodynamic methods. ‘Tsoin Tsoin,’ which means ‘boom boom,’ is a super fun, fresh expression of Cabernet Franc. It’s made with whole cluster carbonic maceration – when entire bunches of grapes are saturated with carbon dioxide in tanks to allow fermentation to begin inside each individual grape. This process creates popping fruit aromas and flavors and keeps the wine light, juicy, and extremely fresh. Notes of sour cherries, underripe plums, and dried herbs intermingle with a subtle pepperiness that is classic Cabernet Franc. Chill this glou glou red down and enjoy!
