The Refosco grape is notoriously late to ripen, often being the last red to be harvested in its native Northern Italy & Slovenia. It can also be assertively acidic and tannic, requiring a deft touch in the winery. Sant’Helena naturally dries some of their Refosco for 8 weeks (a process called appassimento) before an extended maceration, and additional time in the bottle allows the tannins to further soften. All of this patience is ultimately rewarded, as aromatic wild plums, dried herbs, and the secondary development that only time can provide combine for a tasty and memorable bottle.
