Olivier Langlais’ 15-acre estate in Villers-Aux-Noeuds is part of the chalk-rich Petite Montagne de Reims. Champagne Solemme has roots dating far earlier than its 2009 founding would suggest. With family history going back to 1822, Olivier carefully reclaimed ancestral vineyards and transitioned them to organic and biodynamic farming practices. His minimalist approach uses native yeasts, avoids chaptalization, shuns adding sulfur, and rejects filtration and barrel aging, allowing the wine’s natural purity and vibrant character to shine. The blend is predominantly Chardonnay with a touch of Pinot Meunier, aged 36 to 48 months on lees, offering notes of raspberry, white flowers, mint, and a chalky mineral finish.
