For over two hundred years the Dumont family has been cultivating vines in the southern Champagne region of Aube. The Dumont vineyards are dominated by Pinot Noir as it grows well in the warm climate and dense, chalky soil of the region. Their Brut Rosé is a blend of reserve wines sourced from lots where the grapes were particularly ripe with deeply colored skins. Produced in the saignée method, the juice begins fermentation as a red wine and is then separated from the skins after just two days of maceration resulting in the perfect balance of extraction, color, and tannin. Aromas of red currant and ripe raspberry introduce a structured, round palate with notes of Morello cherry, a hint of yeasty richness, and plenty of bright, fresh acidity.

Pairings:
baked brie with cranberries and rosemary
