Luke Bass is in no hurry to produce the most delicious Cabernet he can make. Long fermentations without temperature controls, using only indigenous yeasts, in open top vats--these minimal interventionist processes can take some extra time, but little by little (poco a poco), the wine arrives at a pure expression of the fruit. The Forchini Vineyard receives cooling fogs from the Pacific, prolonging the growing season and producing grapes with great minerality, acidity and freshness. The wine is aged in neutral oak barrels to let the pure fruit shine through. Expect flavors of plum, black raspberry, blood orange and licorice with mild tannins.
