Sitting above the fog on Mt. Veeder is Mayacamas - one of the oldest and most legendary producers in Napa Valley. This historical property has a long lineage of caretakers spanning more than 125 years and continues to consistently produce some of the longest-lived, most classically-styled Cabernet Sauvignons in Napa. The climate in 2003 got warm quite quickly but got hot very slowly, making for an incredibly concentrated, structured Cabernet. This vintage’s Cab is bursting with savory and umami character. These flavors are balanced by dark, condensed fruit, orange oil, cedar, juniper, tobacco, and spice. The tannins are powerful and linger on. This wine is drinking beautifully and will hold up for a few more years.

Pairings:
Seared tri-tip with glazed hakurei turnips with their greens
