Husband and wife team Ross and Bee Maloof quit their day jobs in 2017 and relocated to the Dundee Hills to fully dedicate themselves to winemaking. They source their grapes from organic and biodynamically farmed vineyards, working closely with farmers to produce wines that are full of energy. ‘L’eau épicée,’ French for ‘spicy water,’ is made from direct press Riesling and Gewürztraminer, 15% of which sees 20 days on the skins providing a hazy, golden hue. A rich, complex texture with energetic bubbles leads to a palate featuring lemon zest, white flowers, ginger, and a yeasty, subtly funky finish.
