Based in the village of Avize, proprietors Jean-Herve and Laurent Chiquet are in the final stages of their progression towards estate-owned, biodynamically farmed vineyards. In the meantime, they continue to purchase top quality fruit from their good friends and neighbors to craft bright, chalky wines with balance and ageability that makes the ‘700 series’ some of our absolute favorite Champagnes. ‘Cuvée 739’ Dégorgment Tardif is an even more exceptional blend - it has been aged on the lees for over 7 years, making for a powerfully rich texture with aromas of gardenia and brioche with vibrant acidity and a salinic minerality. On a side note, we love the amount of disclosure on Jacquesson’s back labels; it’s a rarity in Champagne to know the exact dosage, vintages, vineyard and disgorgement date.

Pairings:
Gougères - French cheese puffs
