One of the true up-and-coming estates in Chablis, Gilbert Picq set up shop in the town of Chichée. The property is now fully run by Gilbert’s two sons, with Didier handling the winemaking and Pascal overseeing the vineyards. All of Picq’s wines are fermented and aged in stainless steel, yielding a pure expression of Chablis’ chalky terroir. The name for this wine translates to ‘over the quarry,’ a reference to the fact that the two plots for this wine literally grow above an old quarry in Kimmeridgian limestone. Very mineral driven with plenty of salt seashell punch, lemon confit, and chewy chalky texture.
