Fio Wines is a collaborative project between two families from completely different parts of the world. The Kettern family has been making wine in the Mosel for several hundred years while the Niepoort family is famous in Portugal for making dry table wines. They source the grapes for this bottling from each of their organic estate vineyards – only Riesling from steep slopes in the Mosel is used. Hand harvested grapes are naturally fermented in both stainless steel and old wooden barrels. This is a classic, dry style of Riesling with notes of green apple, crisp pear, lime zest, and plenty of acidity.
Pairings: Gnocchi with tomatoes, sweet potato, fresh basil, and ricotta cheese
