Region: Eola-Amity Hills, Oregon, United States Vineyard: Seven Springs Grape(s): Chardonnay Winemaker: Sashi Moorman & Rajat Parr Drinks Best: Now - 5 Years
After crushing it in Santa Barbara with projects like Sandhi and Domaine de la Côte, it seems like a no-brainer that Rajat Parr and Sashi Moorman would seek out another inimitable location to grow great Pinot Noir and Chardonnay. Enter the Seven Springs vineyard - a 40-year-old dry farmed vineyard in Eola-Amity Hills – a site long recognized as one of the best in Oregon. Fruit for ‘Summum’ comes from just 14 rows of vines producing an exceptional Chardonnay that is both sumptuous and vibrant. The nose is fragrant and complex with notes of lemon zest, wet rock, and cream. A full bodied, rich palate boasts flavors of overripe golden apple, lemon curd, white pepper, and buttered toast.
Pairings: Striped bass with corn bisque, crab, tomato relish, and basil from Stanbury
