After taking over in 1987, Pierre-Luc has slowly doubled his holdings at the meeting of the Sevre and Maine rivers in the pinnacle of Nantes terroir in Saint Fiacre. The granite laden soils of Pont Caffino sit on ledges just above the water and help accentuate the more aromatic qualities of Melon de Bourgogne. After harvesting, he gently presses the grapes and cold soaks them for 8 hours before fermentation to heighten the intense minerality and lessen the yeast aromas of the extended lees aging. Crisp green apple and Anjou pear fruit emerge from the bracing acidity and lend texture to stony finish.
