Cincinnato is named for the historical but mythologized Roman senator Cincinnatus, who according to legend twice took up dictatorship of Rome in times of crisis and relinquished his power each time to return to his farm. They make two still wines on this farm, one white and one red, named for the Gemini twins Castor and Pollux, with ‘Castore’ being the white wine made from the Bellone grape. Indigenous to the central Italy area, this delightful example features pear and apricot notes on the approach before giving way to a mid-weight, inviting finish.
