This sparkling wine is made from an extremely rare grape, Joannita, created in 1968 at The German Wine Institute. A cross between Riesling and several other esoteric grapes, this varietal has proven to be fungus and disease resistant in cold, wet climates. After one week of maceration on the skins, the wine was then bottled un-filtered, undergoing secondary fermentation in-bottle. This style of vinification, called pétillant naturel, creates delightful little bubbles that are more finely textured than your typical Champagne or Prosecco. Discover aromas of lemon, ginger, and wildflowers with a hint of yeasty funk. The palate is full of energy with notes of pear, orange blossom, and a chalky minerality – a must have for pét-nat enthusiasts.
