Bojo do Luar is one of those must try producers for fans of natural wine. Winemaker Fernando Paiva was the first Portuguese producer to acquire the Demeter certification for his commitment to biodynamics. Rather than adding sulfur to his wines, Fernando adds ground chestnut flowers to the grape must prior to fermentation which acts as a natural stabilizer. ‘Tez’ is a blend of native Portuguese grapes - Avesso, which is macerated on the skins for 4 months, adds great tension and tannins with lively stone fruit notes. The Arinto sees 3 months of skin contact giving a pronounced minerality and bright, zippy acidity. Aromas of white flowers and a yeasty funkiness accomany the round, lush palate with notes of white peach and lemon zest.
Pairings: Littleneck Clams steamed with garlic, lemon, and white wine over fresh pasta
