Champagne Fleury was one of the first growers in the region to practice biodynamic viticulture starting in 1989. For 125 years, Fleury has been producing terroir-driven Champagne by working in harmony with nature  to improve soil life and biodiversity. In the cellar, only native yeasts are used during fermentation with minimal use of sulfites and oak influence to create pure and expressive Champagne. ‘Boléro’ is made entierly from Pinot Noir and shows great harmony between the dosage and the acidity. Ten years of bottle aging prior to disgorgement lends rich aromatic complexity with notes of nuts, brioche, and truffle. Layers of citrus and pear fruit on the palate accompany a pleasant saline minerality and creamy bubbles.
