Though technically a part of Burgundy, Chablis is uniquely situated away from the rest of the region. It’s 100% Chardonnay like its Burgundian brethren, but planted in the same limestone soil for which Champagne & Sancerre are famed. The result is a fiercely mineral driven Chardonnay as far from the oaky, buttery, ‘New World’ examples as you can possibly get. Louis Moreau provides a sterling example of precisely this in his Petit Chablis. Aged only in stainless steel and vegan filtered and fined, the wine features Key lime, Meyer lemon, and Granny Smith apple on the nose and throughout its linear, focused palate before culminating in a vibrant, mineral finish.
