The ‘Special Club’ association, founded in 1971, is a collective of winemakers in Champagne who uphold high quality standards of viticulture allowing the true character of the grapes and terroir to shine through in their wines. Today, there are 28 winemakers a part of the association, and José Michel, one of the founding members, has been making Champagne since 1955. His Special Club, aged for six years sur lees, is composed of Pinot Meunier from clay soils of the region and Chardonnay grown in Calcareous soil. With hazelnut and white flowers on the nose, toasted bread, almonds, and stewed golden apples on the palate, this Champagne has richness, minerality, and structure that evoke the true spirit of grower champagne.

Pairings:
Chickpea salad with scallions, Greek yogurt, and capers on seeded Levain toast
