Winemakers Luc Briand and Bénédicte Petit are making some really fascinating wines out of the Anjou Noir region of the Loire Valley. Their passion for the terroir and dedication to biodynamic viticulture are translated as delicious hand crafted wines that we can’t wait to enjoy. Their vineyards sit on dark schists and volcanic soils which undeniably gives their wines a pronounced and unique character. ‘Bulles de Schiste’ is vinified in the ancestral method - the first fermentation is stopped by cold temperatures with a second fermentation occuring in bottle revealing small, frothy bubbles. Soft nutty and yeasty aromas introduce a richly textured palate with notes of apricot, peach, and almonds that are balanced by savory flavors like parmesan rind and a salty minerality.

Pairings:
Salmon & ricotta ravioli in a saffron lobster fumet from Mulino
