At Il Palazzone estate, they omit chemical pesticides, work the vines by hand, and utilize organic fertilizer and cover crops to cultivate biodiversity. For this wine, they separately vinify and blend grapes from three different vineyard sites, each with its own microclimate, to evoke complexity in the complementary aspects of the region. Aging takes place in large Slovenian oak barrels for 38 months, a good 14 months longer than required by DOCG regulation, promising to mature and improve over the years. Complex aromas of exotic spices, sage, dried roses, and black cherries introduce a silky palate with vibrant acidity. Herbal notes of eucalyptus and mint are balanced with hints of licorice, flowers, and fine grained tannins. The 2016 is classically structured and full of aging potential.
