In 1980, three friends (Cilia, Occhipinti, and Strano aka COS) came together to make wines reminiscent of what their ancestors created. Located on the southeastern tip of Sicily, the terroir here is harsh – tons of sun and wind from the Mediterranean which makes for concentrated, intriguing, terroir-driven wines. First aged in amphora as a still Frappato, the winemakers then add unfermented grape must from the following vintage to kickstart secondary fermentation, creating a dry sparkling wine with a rich, golden hue. Slightly nutty, oxidative aromas with red apple skins and tomato leaf combining with red berries and sage brown butter on the palate.
