Samantha and Austin Genke founded Boxcarr Farms in 2009. They farm heirloom produce and have a beautiful herd of dairy goats from which they make some of their cheeses. Their local milk is sourced from a few small family-owned dairies as well.

'Redbud' is named for the gorgeous flowers of the Eastern Redbud tree. This is a firm cheese made cow's milk that is then rubbed with Spanish paprika, aged, and lightly smoked. This is a mild, nutty cheese that is similar to a provolone or smoked gouda. Add a slice to a sandwich or melt onto potatoes, yum!

Pairings: Pinot Noir or Merlot, Sauvignon Blanc, or a crisp, funky cider
